Logging a dive from a past trip
Set the date yourself in step 2, and use the local time at the dive site so it lands on the right day.
You set the date and time yourself, in step 2 of the log flow. The form opens on right now, so a dive from last month's trip needs that row changed before you save.
Where it is: Divemates → Dives → Add, then step 2, "Your dive, by the numbers". Tap Date & Time and pick the day and the time you were actually in the water.
Dives from another time zone
Enter the local time at the dive site, exactly as your watch read there. A dive that dropped at 9:00 in Egypt is a 9:00 dive, and that's how your logbook shows it from then on: every dive keeps its own clock rather than borrowing yours. So log it as 9:00 even if you're sitting at home hours behind.
That sticks once it's set. Open the dive months later from another country, edit it there, and the time still doesn't shift on you.
Your dive numbers will reshuffle
Dive numbers aren't stored on a dive, they're positions in date order. Drop an older dive into the middle of your logbook and everything after it moves up by one. That's the count correcting itself, not a glitch.

Catching up on a whole trip
The form fills in your usual setup from the newest dive in your logbook: entry, suit, weights, cylinder specs, and that dive's depth and duration. Those last two are a gift on a repeat and wrong on the next site, so give them a glance.
Two things it never carries over are the date and your pressures. A single-tank dive opens on standard start and end pressures rather than a blank, so put in what you actually breathed.
